DeltaPlot

It was conceived with Earth sciences in mind, but can be extended to plotting of any type of data within triangular plots. With it, you can choose to plot your data within a set of pre-installed standard ternary diagrams, but you can also create your own diagrams.
DigitizeIt

Data values are transformed to a specified axes system and can be saved in ASCII format.

Dynamic Visualizer for Mathematica

Experimental Data Assistant
