There'll be speed bumps, of course. I keep waiting for quad-core, and it's got to happen eventually.
I think USB 3.0 (also known as SuperSpeed USB) is a good possibility (though I certainly hope Apple won't ditch the FireWire 800 port). Japan’s NEC Electronics has already shipped samples of its USB 3.0 host controller at the start of June, with regular volume production of nearly one million units per month expected to begin in September.
A high-end iMac could have lots more storage. Hitachi is shipping a 2TB, 7200 desktop hard drive (an industry first, as I understand it). And, hopefully, we'll see even better GPUs (graphic processing units).
What do you want want to see in/on the next iMac rev?
